Makdous (Arabic: المكدوس or sometimes المقدوس) are oil cured eggplants. Part of Levantine cuisine (Jordan, Lebanon, Palestine, Israel, Syria), they are tiny, tangy eggplants stuffed with walnuts, red pepper, garlic, olive oil and salt. Sometimes chilli powder is added.[1]
