Tirit, also known as trit, is a meal prepared to avoid wasting dry bread. It is prepared by the broth of offals and cutting dry bread and adding pepper powder and onion. There were also recipes with cheese and yoghurt in a different Hatay resource cookery books.
The recipe includes:
- Day-old bread, cut in chunks
- Feta cheese (or similar), crumbled
- Green onion, chopped
- Parsley, chopped
- Beef broth or stock, hot
Place the bread slices in a bowl. Sprinkle the green onion, parsley and feta cheese on top. Pour some hot beef broth and wait until the bread soaks it in, then pour the rest. The bread shouldn't be dry or juicy. If needed, add some salt and pepper.
